Many commercial loaves contain artificial preservatives, high sugar and salt levels, refined flour, hidden trans fats, and other unhealthy fillers that compromise quality.

Easy Bread Recipe to Try at Home
#### Ingredients: - 450g Flour Type 550 (1 lbs) - 150g Rye Flour (0.33 lbs) - 300g Water (0.66 lbs) - 10g Dry Yeast (0.02 lbs) - 1 teaspoon Fine Salt
#### Helpful Baking Equipment: - 1 Cocotte (I recommend one from STAUB/Zwilling) - 1 Proofing Basket Made of Natural Wicker - 2 Bowls - Dish towel or plastic wrap
#### Baking Instructions: Begin by combining the flour, yeast, water, and salt in a bowl and knead thoroughly. If you have a kneading machine, feel free to use that.
Transfer the dough to a new bowl and fold it for the first time. Grasp the bottom of the dough with your hand and pull it up slightly, then fold it towards the opposite edge. Repeat this process until all sides have been folded. Do this 3-4 times until the dough feels firmer.
Cover the dough with plastic wrap and let it rise for one hour. After the hour, repeat the folding process three times, allowing the dough to rise covered for 30 minutes after each fold.
Remove the dough from the bowl and place it in a generously floured proofing basket. Cover this with plastic wrap or a dish towel and let it rise for 2-3 hours until it has noticeably increased in size.
Preheat your oven to 250 degrees Celsius with the cocotte (lid on) inside. Once heated, carefully take the cocotte out, dust the bottom with a little flour, and transfer the bread from the proofing basket into the cocotte. Cut the bread with a sharp knife as desired, close the lid, and place it back in the oven.
Bake for 20 minutes with the lid on, then reduce the temperature to 220 degrees and bake for an additional 30 minutes. After a total of 50 minutes, remove the bread from the oven and transfer it to a cooling board.
